Canales are definitely the quirky ones of the patisserie world. They are so addictive, but not crazy sweet, nor crazy colorful. They just have a texture that you only get from a canale, but once you’ve had your first bite it feels like a crunch followed by a softness that literally is how every bite of a baked good is meant to be. Maybe a texture I had only dreamed about, but always expected a treat to have, along with a light vanilla, rum scent. It is unique, but yet, pretty darn ideal. One bite and I can almost feel a beret land on my head and it is way too easy to imagine I’m in some little café near Point Neuf sipping black coffee while pretending not to watch a mime pretend to be stuck in a box. They are that good. The canales, not the mime.
These canales are all dressed up for Thanksgiving! Whatever your plans for the day, I hope you get to eat something you love and do something you enjoy. If that includes making your favorite treats look like turkeys, I’m totally with you! I just need to figure out how do you say gobble gobble in French?
