dreamsicle/ creamsicle ice cream cake

What kind of cake do you make for the kid who doesn’t like cake?  Who doesn’t like chocolate? Who has a sweet tooth that can only be described as random, fickle and picky?  A creamsicle ice cream cake, of course.  I was excited and up for the challenge to create a cake that wasn’t cake-like and captured the dreamy-creaminess of the orange and cream flavored popsicles I loved as a kid and that now my picky little man liked best for the moment.

The base for this cake was “golden” oreos- another nod to one of his favorite cookies.  Then a layer of vanilla ice cream and a layer of orange sherbet would be coated in butter cream frosting and orange and vanilla flavored macarons.  Ice cream cake kind of feel like cheating- you get ice cream a bit melty, reverse the layers on your cake, push everything into your cake pan and let the freezer do its thing!  The golden oreos are the only thing I really had to bake, I did make macarons for decorations, but you can cover the top anyway you like! Candles always make a magical looking cake, or store bought candy.  This cake was very fun to plan out, looked regal in my freezer and was a fun way to celebrate someone very special, someone already with eclectic tastes, turning 7.

golden oreo cookie

Ingredients

  • 2/3 c butter
  • 1/2 c sugar
  • 3 tbs golden syrup (lyle's is on amazon)
  • 1/4 tsp kosher salt
  • 1 egg
  • 2 tsp vanilla
  • 2 c all purpose flour

Instructions

  • preheat oven to 350
  • beat butter, sugar and golden syrup until creamy
  • add egg, mix well
  • add flour, salt and vanilla
  • seperate into two disks, wrap and chill 2 hours
  • roll out to 1/4 inch thickness and cut into desired cookie shape
  • space out on a parchment lined cookie sheet
  • bake 10-12 minutes
  • let cool and remove to wire rack after 5 minutes

Notes

lyle's golden syrup is also used in homemade graham crackers and treacle.  if you can't find it, or don't want to order it on amazon, just use corn syrup.

dreamsicle/ creamsicle cake

freeze time 12 hours

Equipment

  • spring form pan, large piping star tip

Ingredients

  • 1 recipe golden oreos
  • 1 pint vanilla ice cream (softened)
  • 1 pint orange shebet (softened)
  • 2 c cream cheese frosting (half dyed orange, half white)
  • cake toppings (macarons, candy, candles)

Instructions

  • set ice creams out for 15 minutes to soften
  • while you wait, clear enough room in your freezer for an 8'' spring form pan
  • spread vanilla ice cream into bottom of cake pan
  • spread orange sherbet on top of vanilla
  • place golden oreos on top, pressing firmly and completely covering the top
  • freeze again over night
  • release the sides of the spring-form pan
  • tint half the frosting orange, leave the other half white
  • smear the orange frosting into one side of a frosting bag, smear the plain white on the other side
  • pipe stars all over the cake, top with anything you want for a festive look
  • store in the freezer until ready to serve

Notes

clear out a big part of the freezer for the cake!  I used an 8'' spring form with really high sides.
