These cookies are like a cookie’s version of dressing up for Halloween.  Or maybe a pretzel’s way of dressing up like a cookie for Halloween?  I’m not sure. But I do know they are fun, they are a break from sweet on sweet, and they are something a bit different.   I call this the easy version, because a trendier, more complicated version is on the way in a while.  Be on the look out! 

            To amp up the Halloween factor, press in some Reese’s pieces when this comes out of the oven- which ties into the Halloween movie pic for day 5 of October…no list would be complete without the movie ET.  At different stages of life I have empathized with almost every character in this movie (well, except for the creepy government men).   And, like this cookie, it is kind of a unique for a movie, but totally comforting.  (If you must know, I am definitely feeling the mom at this moment in life, my solution to all covid stress is to throw pizza at the problem and dress up like a cat. )

pretzel cookie easy version

Cook Time 20 minutes

Equipment

  • food processor

Ingredients

  • 3 1/4 c pretzels
  • 1/2 c flour
  • 1/2 tsp baking powder
  • 1 c butter (2 sticks)
  • 1/2 c sugar
  • 1 egg yolk

Instructions

  • pre-heat oven to 325, line the bottom of a tart pan with a removable bottom with parchment
  • pulse 1 3/4 c pretzels until powdery, scoop out 1/2 c into a seperate bowl and disgard the rest
  • coursley chop the remaining pretzels and remove from processor, set aside
  • in the processor, pulse butter and sugar until pale and fluffy, pulse in egg yolk. pulse in 1/2 c pretzel powder and flour
  • stir in chopped pretzels
  • press into tart pan
  • bake for 20-25 minutes, until pale brown
  • let cool for 1 hour
  • slice
