My son’s love language is donuts. And to be honest, the second I bite into the perfectly glazed pillow of sweet and soft dough that is a doughnut, I always wonder why people spend time eating anything else? So, for Valentine’s Day or any weekend we want to make special, doughnuts are on our mind. If I am planning ahead, I always turn to America’s Test Kitchen overnight doughnuts, which lead to a more leisurely morning, which is my love language! But sometimes the doughnut urge hits and you have to answer without waiting 12 hours. These are my “coconuts for you, go nuts doughnuts.” Fast, cheap and easy- no fussiness, minimal waiting.
That leaves you energy to go topping crazy! Gone are the days when a strawberry doughnut was a walk on the wild side, my kids like simple glazes, but these doughnuts can hold up to whatever creative toppings you throw at them- cereal, mini macarons, candied fruit, shredded coconut- make your morning inventive, fun and unexpected! You can add spices into the dough, too- for an even more heavenly smell- a teaspoon of ground cardamom, for example instead of the ground nutmeg (which tbh smells pretty darn heavenly itself!). Or cinnamon. Infuse the milk you warm up the coconut oil with vanilla beans. or tea! Enjoy! Just like there are millions of ways to celebrate valentines day, these morning of doughnuts can be dressed up or down however you like!

Ingredients
- 3/4 c milk
- 3 tbs coconut oil
- 1 pk instant yeast
- 3 tbs warm water
- 1 egg beaten
- 2 tbs sugar
- 1 tsp kosher salt
- 1.2 tsp ground nutmeg
- 12.5 oz flour(about 3 cups)
- ` oil for frying (1/2 gallon)
quick glaze
- 3 c confectioners sugar
- 2 tbs plus more until desired thickness, of milk
Instructions
- warm up your milk in microwave and scoop in your coconut oil so it melts, pour into standing mixing bowl with paddle attachment
- place your yeast in warm water for 5 minutes
- add all ingredients except the flour and paddle until combined
- add in half the flour and paddle until combined
- add the other half of the flour, paddle for a couple minutes then switch to the hook attachment and knead until it starts to pull away from the bowl
- place in a well oiled bowl, cover with a tea towel and set in a warm place for 1 hour, so it can double in size. dough will be sticky.
- after an hour turn dough out onto a well floured surface and pat into a square about 1/4'' thick
- cut into desired shapes
- let these shapes rise in warm place for 1/2 hour
- heat oil in dutch oven or deep, heavy pan. oil needs to hit 365F and stay there (you might need to turn your burner on and off to keep it from getting too hot or cool)
- drop in 3 doughnuts art a time, leave in for 1 min each side (flip with tongs or spatla, the oil is hot! take care!)
- glaze and top to your hearts content!
- to make the glaze just stir together confectioners sugar and milk until smooth- stir a bit more than you think you can before adding more milk to thin it if needed. if you make it too thin, throw in some handfuls of confectioner's sugar until it drizzles comfortably, not too fast, not to thick.
