don't call me basic, basic pie dough

Ingredients

  • 2 3/4 c flour
  • 1 tbs sugar
  • 1 tsp salt
  • 14 tbs butter, chilled
  • 2 tbs bacon fat or butter
  • 1/2 c ice water with 1 tbs vinegar added

Instructions

  • pulse all ingredients except the fats and water in a food processor
  • cut up the butter and drop it into the processor and pulse in a few times
  • add 1/2 of the water in tablespoons and pulse until mixture is crumbly (6 times)
  • add the rest, pulse 6 more times and then pull out the dough
  • smush into 2 disks, wrap and chill in fridge 2 hours
  • take out, let warm up a little so you can roll out and use as wished
  • to bake, pre heat oven to 400, pop pie in and drop temp to 350, bake until golden (blind baking, about 18 minutes, filled up up to 50 minutes

Notes

this is a double recipe- always make two, keep one disk in freezer for pie emergencies!
